Since moving to Hawaii Island from Germany, Markus and Marie Stolz have
introduced a German treat — baumkuchen, which translates to “tree cake” — to
the Islands through their business, Baumkuchen Farm.
The cake, named for its resemblance to the rings in a tree trunk, originated in
Germany and is also popular in Japan. Markus Stolz, who lived in Japan for a few
years as a child, said that Baumkuchen Farm’s cakes are prepared in the Japanese
style of the treat, which he said is moister and lighter.

The couple launched Baumkuchen Farm in 2021, and they produce cakes with a
range of Hawaii flavors — including local coffee, macadamia nuts, pineapples,
mangoes and more — at their property in Papaikou, north of Hilo.
Building retail channels
Early on, Stolz said they grew the business through reaching out to retailers,
starting with those that already carried their other product line, Paradise Sea Salt.
“We could approach those retailers and introduce our new product … so that is
how we won our first Baumkuchen Farm retailers,” he said. “Now, more and
more, people are seeing our products, so some retailers have started approaching
us directly — they are contacting us.”
Baumkuchen Farm produces Japanese-style versions of a German treat called baumkuchen,
which translates to “tree cake.”

Today, Baumkuchen Farm sells its cakes at about 25 stores, with a focus on
specialty retailers and shops in resort areas. Much of its retail operations are
concentrated on Hawaii Island, but it can also be found at shops throughout the
state and at one shop in California.
Baumkuchen Farm also regularly makes appearances at farmers markets and
other pop-up events. These types of venues, Stolz said, allow the company to
interact with customers directly.
“At the markets, [customers] can talk to us, we can explain the product, and they
can try samples,” he said.
The farm
The company’s retail channels also include a brick-and-mortar store at its Hawaii
Island property, which is home to its production facility and also includes a coffee
shop and a farm, where they grow vanilla and cultivate a wide variety of trees
and flowers.
At the site, Baumkuchen Farm offers a cake baking experience and farm tours.
“The property is just a gorgeous place where you can come and sit under a tent
and drink a cup of coffee and eat some pastries and enjoy the scenery,” Stolz said.
Baumkuchen Farm also sells directly to consumers via its online store. Stolz said
he has seen orders come from throughout the country. He estimates that most of
its online orders are from returning customers, including past visitors to the farm
or those who have received a cake as a gift.

This year, Stolz said his goal is to grow the company, including expanding its
presence on Oahu and building up business on the Mainland.
As part of the growth, Baumkuchen Farm recently introduced new packaging.
Typically, the products are packaged in a tin, but last year Baumkuchen Farm
created a version of the cake that can be sold in a bag instead.
Stolz said the tins are designed to be gift items that are geared more toward the
tourism market, so he feels the new packaging will help the company to diversify
and broaden its audience.
“We are trying to build up a snack business where coffee shops, convenience
stores or supermarkets can start selling this product,” he said.
“It’s reducing risk, basically,” he said. “We want to get more into the Honolulu
area with our snack business, just to have a different product that is not so
dependent on tourism.”
